How to Make Delicious Yam Porridge 







Yam is one of the foods that is richlypackedwithcarbohydrates.

Yam could be eaten in different ways. It could be fried, roasted, and could be made into yam flour for fufu. It could also be steamed and eating with sauce etc. 

My favourite part is when it made as porridge yam. Because Yam is high in carbohydrates I prefer cooking it as porridge yam and I love to include leaves to help the yam digest easily.

      Ingredients 




Yam 

Spinach or/and ugu leaf

1/4 cup of Olive oil 

2 tablespoon salt 

1 big Onion 

Prawns (optional)

I clove of garlic 

Maggi seasoning (could use any seasoning of your choice)

4 bell pepper 

1 scotch bonnet pepper 

1/2 teaspoon curry powder 

 2 tins of mackerel 

1/2 teaspoon of ground blackpepper 




         Preparation 


Step 1 steaming 



Peel the yam 

Cut to small size 

Wash properly 

Put into your cooking bowl 

Add water just a little above the yam 

Cook at a full heat for about 10 minutes and drain the water and set aside. 

NB yam takes about 20 - 25 minutes to get done. You first cook for 10 minutes because you will need to mix with the sauce and let it cook for 5 more minutes. 

When you cook the yam for 10 minutes, the yam will begin to get soft during when it's not cooking but not too much. 




                Step 2





Wash and cut the leaves then set aside. 

Blend the bell pepper, onion, garlic and the scotch bonnet pepper together and set aside. 

Cut the remaining onion and put aside. 
  
 


            Step 3

        Making the sauce 






Heat olive oil in a sauce pan at a medium heat. Add the onion and let the onion soften a little bit. Add the blended ingredients together. Season with curry powder and blended blended black pepper. Allow to cook for 2 minutes and then and the prawns.


        

    Step 4





Combination of yam and sauce to make the porridge. 

Reduce the heat to medium low. Add the yam, stir to mix. Add the leaves then stir to mix everything together. Simmer for 3 minutes.
